Jonny's Durian Breakfast Muffins

These are fabulous breakfast muffins with an exotic, tropical twist. Tempered with sweet coconut milk and a bit of vanilla, they will easily convert anybody questioning the King of Fruits.

SERVES 5 -6 , 6 muffins (change servings and units)

    Preheat oven to 325F (or 310F for convection ovens).

    Remove any stringy portions of the durian flesh.
  3. 3
    Mix all ingredients in blender.
  4. 4
    Place mixture into muffin pan. (This recipe is for 5-6 large muffins.).

    Bake for 15 minutes. Let cool before removing muffins. Place muffins on rack to further dry their exteriors before eating.

    Tip: do not consume these with alcohol as consuming durian fruit with alcohol is dangerous. Durian is a 'heaty' food so serve together with a 'cooling' food such as banana or mangosteen.

It is a great recipe, fragrant and tastes fantastic. I doubled the recipe to make 18 muffins & adopt the mixing of dry-into-wet ingredients method. Used 500 gr durian flesh and reserved some for topping. I also added a 1/4 cup oilve oil. Baked 20 minutes at 180 degree C fan forced.

    This was really good. I doubled the recipe and got 21 normal-size cupcakes out of it. If I'd filled them a bit less full, it would have made 2 dozen. I cooked a little longer until the center was set, but think they could have stood to be underdone.
