Jiffy Corn Muffins Mix Clone

Sometimes a recipe will call for a box of Jiffy Corn Muffin Mix. Here's a clone recipe you can make at home. If another recipe calls for a box of corn muffin mix, leave out egg and milk from this recipe. This recipe is equal to one 8.5 ounce box of Jiffy Corn Muffin Mix. Makes 1-1/2 cups dry muffin mix.

SERVES 6 , 6 muffins (change servings and units)

    Preheat oven to 400°F Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk.

    Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.

    Combine above mixture with egg and milk and mix well. Batter will be slightly lumpy. For best rise, let batter rest for 3 or 4 minutes. Stir once or twice after rest.

    Fill muffin tins 1/2 full. Bake 15-20 minutes. Makes 6 muffins.

I made a double batch and made cornbread to go with soup. We are huge Jiffy muffin mix fans. It's great and for the price, you can't beat it! This is a great clone to use when your out, or to make in bulk and use as needed. The cornbread came out moister and less sweet than Jiffy brand, so we gave it 4 stars for duplication but 5 stars for flavor. Thanks for sharing the recipe.

    I needed this for Chicken Tamale Casserole (Cooking Light) and didn't want to buy the mix. It worked great, except that it was very sweet for that recipe. So I would reduce the sugar next time if it's going in a savory recipe. Thanks for sharing this easy substitute!

    Good muffins, although not exactly like the box mix. They aren't quite as sweet as the original, which disappointed my husband, but I preferred. The ingredients are things I keep on hand, so I don't have to remember to buy anything at the grocery store, and it takes a couple minutes, tops, to measure the ingredients out, so IMHO it is no less convenient than the box. Plus it has half the saturated fat and none of the preservatives!

    Made this up as mixes to use later and stored in plastic containers. All I needed was to add the egg, milk & oil. First time I used the pre-measured mix I made pancakes. I used the recipe off the side of the Jiffy box for pancakes- added 1 egg, 2 T Canola oil and 3/4 c milk. The best pancakes ever, very light with a lot of flavor. This mix replaces the Jiffy boxes in my pantry. Thanks Antilope for sharing.
