Jamie Oliver's Easy Quick Spaghetti

This is a lovely pasta dish from Jamie's Dinners, the Jamie Oliver recipe book. I make it when I feel like a tasty pasta but can't be bothered slavign away for ages.

SERVES 4 (change servings and units)

Ingredients

Directions

    Bring a pan of salted water to the boil, add the spaghetti and cook it until al dente - approx 10 minutes.
  2. 2
    Chop tomatoes, basil, rocket, and olives however you like, chunks, slices, etc.
  3. 3
    Put all these in individual bowls.
  4. 4
    Add vinagar, oil, salt and pepper to taste.
  5. 5
    Keep tasting till you get it right!

    The pasta should be reday by now, so drain and add to bowls quickly.

    Stir everything together and serve with parmesan cheese and fresh Italian bread, if you like.

    Note: You can use any type of pasta you like, I just choose spaghetti.

This is a very tasty recipe. I did make a minor change. Instead of 5 tomatoes I used one pint of grape tomatoes. I also omitted the olives, mainly because I didn't have any on hand. Next time I will add them. The directions mentioned adding 'rocket', but they were not included in the ingredient list. Not knowing what rocket is I z-mailed the chef who kindly replied that it is a type of salad green a little bit like spinach or lettuce, with a sharp, almost bitter flavour. My DH said this recipe deserves a 5* rating, and I agree. I will definitely be making this again with the addition of spinach. Thanks for sharing this recipe.

    I used fresh tomatoes and basil from the garden, left out the olives, and added parmesan as well. It was absolutely fantastic! I have the cookbook and had been meaning to try it out. Will be an oft featured meal in the summers!

    I was really surprised how easy this was to make and how flavorful it was. I added romano on top as well. Will make again.

    I made this on a week night. it was very good and fresh tasting. FYI rocket is known in the US as arugula.
