Jalapeno-lime Chicken

I was reading the intro of this recipe and realized that yes, now I have tried it and even posted a picture so I decided to update. This is an easy recipe that is heart healthy. The recipe was in an issue of Diabetic Cooking.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine the oil, lime zest, lime juice, jalapeno, cumin, minced garlic, pepper and salt in a resealable plastic bag.

    Place chicken in bag and press to remove excess air; seal tightly.
  3. 3
    Turn bag over several times in order to coat chicken with mixture.
  4. 4
    Chill 30 minutes or up to 8 hours.
  5. 5
    Preheat grill, oven broiler or indoor grill to medium high heat.
  6. 6
    Place the chicken on grill or in broiler pan.
  7. 7
    Cook 12 to 15 minutes or until chicken is no longer pink and juices run clear when pierced with a fork, turning twice to get grill marks.

    Garnish with jalapeno slices and black olives if desired.
  9. 9
    Please note: When handling jalapeno peppers take caution.
  10. 10
    They can sting and irritate the skin; wear rubber gloves when handling and do not touch face or eyes.

    Wash hands throughly with soap and water after handling.
  12. 12
    The time to make does not include the marinade time.

3.5 WW Points. This is great! We enjoyed the spicy tart flavor. I cooked them on my George Foreman grill. Worked wonderful. I did cut the recipe in half and marinated for 5 hours. They came out nice and moist. Added some chopped cilantro on top. Yummy! I will be making these again. Thanks PaulaG for another great recipe.

    I marinated the chicken breasts for about 6 hours, and they had a very lovely and fresh taste. They were just a tad dry, only reason I'm not giving 5 stars. Next time I'll try adding one more tbs oil to marinade. Thanks for posting !

    Loved this!! After only 3 hours of marination the flavors kicked in nicely. (I used chicken tenders) I split the citrus juice/zest 1/2 lime/lemon since all lime does not agree with my tastebuds. I also added dried arbol chilies to make it hot!! Once I took them off the grill, I could not stop eating them!! Thank you for the recipe a repeat for sure!!
