This is a wonderful cold drink made by the famous chef Jack McNair. It is non- alcoholic in the recipe but I am sure that something with pineapple or rum would taste great with it. If you can't find cream of coconut then just leave it out, it tastes great without it.

SERVES 2 (change servings and units)

    Combine all the ingredients except the fresh pineapple in a blender and blend until it becomes liquid (10 seconds).

    Serve it immediately in chilled glasses and garnish with the fresh pineapple.
