Italian-Style Shrimp With Lemon and Garlic

source: Cooking Light, June 1996 — This is a very light spring/summer dinner. Excellent served with a salad, some sourdough roasted garlic bread, and a nice glass of wine.

SERVES 4 (change servings and units)

    Combine olive oil, Italian seasoning, paprika, lemon rind, salt, pepper, and garlic.

    Add shrimp and toss to coat.
  3. 3
    Thread the shrimp onto 4 skewers.
  4. 4
    The original recipe calls for broiling these on a broiler pan coated with cooking spray (2 minutes on each side), however, I prefer to grill them over medium heat until they turn pink (2 to 4 minutes per side).

    Remove the shrimp from the skewers and arrange over the hot pasta.

    Drizzle with lemon juice and sprinkle with parsley.

This is good and very quick and easy to make. The shrimp turned a nice dark pink and it was perfect tossed with the pasta. Everyone liked it. DD especially liked the shrimp. I didn't have Italian seasoning so I used a comination of basil, thyme and oregano.

    Very easy to make, enjoyed by all. We grilled them and served with it with Lemon Spaghetti With Parmesan #168660 just like Sugarpea. Very tasty and great for Barbq's will become a regular at ours.

    This was delicious. We also grilled the shrimp and loved the flavor. I served it with Lemon Spaghetti With Parmesan #168660, a perfect combination.

    My family and I love shrimp and this turned out so well--a nice mingling of garlic, lemon, and herb. My husband braved the cold and cooked these on the grill which added a little smokiness to the flavor. The shrimp looked very beautiful arranged over a bed of angel hair pasta. I served this with a side salad and white wine. Very simple, elegant, and healthy. Thanks for posting.
