Many thanks I needed someway to use up some of my oversupply of instant potatoes. These were great, my family loved them. Thought of trying them with a little ranch dressing also.

    Subbed garlic for onion, and reduced to serve 2. Topped with a bit of paprika for color. Otherwise made precisely as described. It was good, but bland. Maybe a little more cheese, or top with cheddar, or even add crumbled bacon next time.

    Oh. My. Goodness. I made these tonight with the garlic flavored instant potatoes, store brand, and it is AMAZING. I don;t even LIKE potatoes, I thought I was making this to please everyone else and now I am not even sure they are getting any. JUST KIDDING! Also, I made these ahead, mixed it all in my mixer to make it fluffy, and put it in a bowl in the fride. when it was time to cook I just put it in the dish and popped them in with my roasted chicken 25 min before done! MMM!

    Your right! Simple and delicious! I halved the recipe and it came out just fine. I did add a bit more milk because it seemed a little on the dry side before I put it in the oven. I don't think anyone thought these were instant potatoes! Thanks for posting!
