Indonesian Beef Noodle Curry

This is a simple way to cook a beef curry, the use of cabbage gives this dish a different slant. Not many ingredients so give it a go. You could omit the noodles and serve with boiled rice.

SERVES 4 (change servings and units)

    Heat the oil and brown the onions and garlic.
  2. 2
    Add the curry powder and coriander, cook for 2 minutes.
  3. 3
    Add the meat and brown it on all sides, add the coconut milk, cover and simmer for 40 minutes.

    Add the beans and noodles, cook for 10 mins,.
  5. 5
    add the cabbage and cook for 5 minutes.
  6. 6
    Serve.

    This was quite tasty. About the only problem I would forsee is that the portion sizes are relatively small. My husband and I aren't huge eaters, so it wasn't a problem for us. Usually we end up getting half again the servings out of a recipe when we prepare it. This one was just enough for the two of us. (granted, we were dumb and forgot to start the rice cooking early enough to have it with dinner, so we grabbed some bread to sop up the sauce with.) I might make this again with some hot sauce or cayenne added for a little kick. Overall it was very tasty though
