is there a nobel prize for indian cooking? if so, then it must go to this dish. totally superb! i rarely go off the handle like this, but this was so good against all expectations (i don't usually like cauli that much). the only change i made was to add 1tsp each of ground cumin and coriander to the yoghurt mix in step #2, which made it even more flavorful. i also subbed peas for carrots since i didn't have any. the amount of stuffing is very generous - use a large cauli. it was my first time stuffing cauli and it was not easy, but if you gently pry apart the florets and stuff it with your fingers rather than a spoon, it's easier. when i slathered the yoghurt mix on it before it went into the oven, DH was teasing me that it looked just like a roast bird. i don't think he is remiss, this would make an amazing main dish for special occasions if you want to wow your vegetarian guests. ok excuse me while i get back to my dinner to finish this before DH does...
