Impossible Coconut Caramel Custard Pie

No muss, no fuss, just a delicious pie that is ready for the oven in five minutes. Forms its own crust with a fabulous custard filling and the coconut topping toasts as the pie bakes.

SERVES 8 (change servings and units)

Ingredients

Directions

    Combine all ingredients except coconut in a blender and blend at high speed for 15 seconds.

    Pour into greased 10" pie plate.
  3. 3
    Sprinkle coconut on top (optional).
  4. 4
    Bake at 350° for 45 minutes or until knife inserted in center comes out clean.

    Cool completely before cutting.

i really liked this pie. DD said it was good but she didn't like the way it looked (the brown sugar).Didn't stop her from having seconds.

    My family finished off this pie in two days. I also added about 1/2 cup (or a little more) coconut to the batter and as if it weren't sweet enough, I served it topped with Cool Whip. This recipe is definitely a keeper!

    This was really good. I added a cup of cocunut into the custard like one of the other reviewers did, and it was perfect. I will definitely make this again.

    I followed Kelbel's review in that I added 1 c. of coconut to the batter and then an additional 1/2 c. of coconut on the top. In addition, I added 1 tsp. of coconut extract (yes, I REALLY like coconut). This was so simple to throw together and the creamy custardy and extreme coconutty nature of the pie was great. It was delicious both warm and cold. Thanks for a nice recipe.
