I love this for light lunch. It's fresh and alive with lime and cilantro.

SERVES 3 -4 (change servings and units)

Ingredients

  • 1 california avocado
  • 8 ounces surimi (Crab flavor)
  • 1 medium tomato, chopped
  • 2 tablespoons chopped cilantro
  • 1/4 onion, sliced
  • 1/2 lime, juice of
  • salt & freshly ground black pepper

Directions

  1. 1
    Shred surimi and place in bowl.
  2. 2
    Slice avocado in half and twist to open. Carefully Lodge a knife in the seed and twist to remove.
  3. 3
    score avocado into 1 and 1 inch sections and spoon into bowl.
  4. 4
    Add tomato and squeeze 1/2 lime over the minute.
  5. 5
    Add onion slivers.
  6. 6
    Add cilantro.
  7. 7
    Salt and pepper to taste.
  8. 8
    Stir well and serve.

Delicious! I used lemon instead of lime because it is what I had. I also did not have any cilantro but used Old Bay Seasoning. It was great!

    This is now my favorite salad!!!!Fantastic (as I wolf down my 2nd bowl today). I used lemon instead of lime (dont like lime) and I added a very small pinch of chilli peppers for umph. Thank you apple guy. Oh yeah, the 3-4 servings served 2 in my house. This salad rocks.
