These pancakes were good for any time of day…breakfast, dinner…it didn’t matter! When I came across this recipe for IHOP’s version of this classic, it brought back such good memories that I had to share it with you all. Enjoy !!!

SERVES 4 (change servings and units)

    Beat eggs until very light.
  2. 2
    Sift together the flour, salt and sugar. Add half the milk and fold in flour mixture. Then add remaining milk, cream and butter.

    If consistency is too thick , add more milk.
  4. 4
    Using a hot griddle, ladle the batter onto the griddle creating a 5-6 inch diameter. These pancakes are thin and will only need a minute or two on each side.

    Place 2 tablespoons of lingonberry (Swedish cranberries) sauce on center of pancake and roll up like jelly roll.

    Serve sprinkled with confectioners sugar.

These came out pretty good. All the ingredients were fine and the taste as well. I just should have added that little bit more milk because they were thicker than Ihop's once cooked, but I chose not to because it looked thin enough to the eye. At least now I know! And next time I'd like to try it with the lingonberry sauce, but didn't have any. But my strawberry jelly was a Fine subsitute! Jesus bless you for sharing!

    We loved these wonderful pancakes Brandess. The delicious swedish pancakes were quick and easy to make. These thin little babies are full of flavor. I served the pancakes rolled up and used a varitey of jams as the filling. I used apricot, strawberry and concord grape jams, garnished with a little powdered sugar, they were perfect. Thanks for sharing your recipe.
