"I Hate Ricotta" Meat & 2 Cheese Stuffed Shells

My non-ricotta cheese-eating husband always raved about "the meat stuffed shells his mom used to make." His grandmother recently wrote to the TV guide (where this recipe originated) and they were kind enough to send back the recipe, dated September 13, 1976. I have to agree, these are delicious! Serve with a tossed salad and garlic bread. The prep time includes the pasta/beef cooking; the cook time is the baking time for the casserole.

SERVES 6 , 18 stuffed shells (change servings and units)

    Boil water for pasta.
  2. 2
    Meanwhile, in a large skillet, brown ground beef, onion and garlic; drain and cool.

    Cook pasta in water, drain.
  4. 4
    Preheat oven to 400 degrees.

    Meanwhile pasta is cooking, combine meat, mozzarella cheese, bread crumbs, egg and parsley; season with salt and pepper.

    Mix spaghetti sauce with tomato sauce; cover bottom of a 13x9 casserole dish with 1/4 of the sauce.

    Stuff cooked, drained shells with the meat mixture and place on top of sauce in dish in a row.

    Add red wine to remaining sauce and mix well; cover shells with sauce and sprinkle with parmesan cheese.

    Bake in oven for 20-25 minutes or until bubbly and browned.

Not only do i hate ricotta, but my ever so wonderful boyfriend is "mr. protein" and not a fan of pasta dishes...HE LOVED THIS!!! these shells are SO great!!! and they are the PERFECT meal to make when company comes over because you can prepare them ahead of time then just throw them in the oven when you're ready to bake them. i actually used 1lb ground beef and a 1/2lb of sausage and they were DELICIOUS! this one is DEFINITELY going to be in the rotation...and the real beauty is, the leftovers are even BETTER the next day!! thank you for a BEYOND fabulous recipe.

    So good! I doubled the recipe and used Italian sausage for 1/2lbs. ground beef. I used the filling to stuff cannelloni crepes.

    I love Ricotta but DH does not and so I made these especially for him and he loved them. I made the recipe as directed and it was perfect. I cooked some extra shells and stuffed them with the meat mixture then I placed them on a cookie and sheet to freeze. When they were frozen solid, I put them in a ziploc bag. Now when I am need of an easy supper I can pull them out, top them with sauce and bake in a covered dish until they are heated through. Thnaks for this great addition to my OAMC collection!

    I had to jump on this one because "I hate ricotta" for sure. These were perfect and I'm so glad you posted this recipe. Easy to make because you could just do one thing at a time and let them cool. My DD stopped by this morning and ate one cold. She almost fainted with pleasure and then took the leftovers home. Jeeze. lol. Your DH might like my Another Baked Ziti Another Baked Ziti. without ricotta. Thanks again TaraK73 for this great recipe.
