"I Can't Believe It's Low Fat" Creamy Potato Salad

The name says it all. You have to try it to believe it!

SERVES 8 (change servings and units)

Ingredients

    Cut potatoes into 1/2" pieces; place in medium saucepan.
  2. 2
    Add water to cover.
  3. 3
    Bring to a boil; cover, reduce heat, and simmer 15-20 minutes or until tender.

    Drain and cool.
  5. 5
    Combine potato, chopped green onion, and pimemto in a large bowl; toss gently.

    Combine mayonnaise and next 9 ingredients; stir well.
  7. 7
    Add to potato mixture, tossing gently to coat.

    Cover and chill.

I made this for a luncheon for thirty seniors. They-and the kitchen staff- loved it. I used 90 small red potatoes, cut them in quarters and quadrupled the rest of the ingredients. I didn't use pimentos or garlic. It was awesome. Not even a spoonful left!!! I will definately make this again for church functions and for family gatherings. Thanks Carrie Ann-I'll even pass it on to my TOPS friends.

    Wow! This is my new favorite potato salad. I like that it doesn't have eggs and all their fat and cholesterol. I omitted the pimentoes and garlic. I used non-fat yogurt, non-fat sour cream and non-fat mayonnaise. I substituted apple cider vinegar. It was soooo fast and easy to prepare. I'm lazy and I didn't have a problem with this. It fits right in with my low to no-fat diet. Thanks. I don't know how I lived without this.

    Best fat free potato salad I've ever had (and I've had a bunch!). I used all fat free products and it was super creamy and flavorful. The combination of mayo, sour cream, and yogurt allowed it to not taste like fat free mayo. I'll make this again.
