Hungarian Cucumber Salad

SERVES 4 -6 (change servings and units)

Ingredients

    Peel the cucumbers and slice them very thin.
  2. 2
    Sprinkle the cucumbers with salt and let stand for 30-60 minutes with a plate and a 5 lb weight on top.
  3. 3
    Squeeze out the water on a paper towel.
  4. 4
    Combine the sugar, vinegar, garlic powder, and water.
  5. 5
    Add the cucumbers and marinate for a few hours.
  6. 6
    To serve, sprinkle paprika on half of the salad and black pepper on the other half.

    Every year on the anniversary of my father's death I celebrate his life with a Hungarian feast. Every year I vary the menu, but ugarkehsalat is always a staple. This was a simple enough version, but I think there was too much water. I ended up draining the salad in a colander before serving it at the table. I added a tiny bit of red onion for bite. The salad was quite tasty, but the amount of water is too much. Without the water the salad would be perfect.

    We love cucumbers and the spices made this perfect. I used rice wine vinegar and spicy paprika. Thank you for posting!
