Hot and Sour Turkey Soup

A delicious way to use leftover turkey. A quick,light, boxing day lunch, or any time. From Better Homes & Gardens

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine chicken broth, mushrooms, vinegar, soy sauce, sugar, gingerroot and pepper, Use a large saucepan.

    Bring to boiling.
  3. 3
    Meanwhile, Stir together cornstarch and cold water.
  4. 4
    Stir into broth mixture.
  5. 5
    Cook and stir until thickened and bubbly.
  6. 6
    Cook and stir for 2 minutes more.
  7. 7
    Stir in turkey, bok choy and pea pods.
  8. 8
    Pour the egg slowly, into the soup, in a steady stream while stirring 2 or 3 times to create shreds.

    Remove from heat.
  10. 10
    Stir in green onions.

This soup is so good, I really loved this. I used all fresh veggies, sugar snap peas, and left over Christmas turkey! Thanks for this wonderful, low cal, low fat winner.

    Fantastic soup recipe. It's easy to make and better than any I've had at Chinese restaurants. I wouldn't change a thing! Thank you for sharing. Sharon

    I love this soup. I've made it several times to use up leftover turkey or chicken. I've substituted vegetables I have on hand like celery and frozen peas and it's just as good. I also leave out the sugar, because I like the tanginess of the vinegar. Thanks for posting this.

    This a delicious way to use up lefovers without having the same meak for a week. This is so good that I bought more turkey just to make it again!
