Hot Swiss Chard Salad

    Marinate garlic clove in oil for 1 hour.
  2. 2
    Remove garlic. Wash, dry and tear chard into bite-size pieces (remove stems). Just before serving, heat oil, vinegar, salt and pepper, stirring occasionally.

    Pour over chard.

    Toss until well coated.
  5. 5
    Sprinkle with eggs and bacon.
  6. 6
    Toss lightly.

    Garnish with hard-cooked egg slices, if desired.

    Makes 4 to 6 servings.

Wonderful! I added some bacon drippings to the oil to make almost a 1/3 cup of oil. Garlic clove was minced and stirred into the hot bacon drippings for about a minute. I garnished each of two plates with hard cooked egg slices. I served this lovely salad with mozzarella garlic toast. Nice meal. I think this would be equally nice with spinach. A delicious way to enjoy the Swiss Chard from my garden. Thanks.

    This was delicious and relatively easy to make. My family loves garlic, so I minced a large clove of garlic and added it to the oil before heating.

    Enjoyed immensely!! Delicious tang provided by the red wine vinegar, used an equal amount of oil, 3 eggs, 5 slices bacon, and added garlic to the dressing before heating, instead of marinating it in the oil. This salad fed 3 of us as a main course with garlic buns. Don't overlook this salad, it's good!
