Hot Butternut Oatmeal

I love oatmeal for breakfast and the warmth and creaminess of the butternut squash brings breakfast to a whole other level!

SERVES 1 (change servings and units)

Ingredients

    Cook 1/2 cup oatmeal with 1 cup water (I just nuke it).

    Dilute the puree with 1/4 cup water.

    pour the butternut into the oatmeal and microwave until hot.

    **You could try adding spices, but i like eating mine with a little sugar.

A great way to use up excess butternut squash! This would be good for picky eaters, too; my husband didn't even know it was in there!

    This was really good. I added just a little bit of sugar to make it sweet, but somehow the recipe came out a little smoother than in the recipe.

    Sounds yummy, as soon as I can get a butternut squash I'll try it. I used to do the same thing with pumpkin puree.
