Hot Bananas in Coconut Milk

This is a Chinese dessert that I found to submit for the Zaar World Tour '05... Coconut milk lends a sweet flavor to bananas in this quick and easy recipe. It makes a light dessert for two, or can easily be doubled to serve four people.

    Peel the bananas and cut into bite-sized pieces.
  2. 2
    In a medium saucepan, bring the coconut milk to a boil. Add the sugar and cinnamon, stirring to dissolve.

    Add the bananas.
  4. 4
    Bring back to a boil, then turn down the heat and simmer for 3 - 5 minutes, until the bananas are tender but not mushy.

    Serve hot, sprinkling extra cinnamon on top if desired.

    I subbed cardamom for the cinnamon and the kids loved it. This was especially great for a little guy that loves bananas and needed a hot breakfast before school. :D

    This was a quick and tasty treat. I ended up eating most of it myself since DH was being picky. Just the right amount of sweet and heat on a cold night. Reminded me of the flavor of fried bananas.
