Horseradish Dill Potatoes

Perfect side for a roast. I doubled the sauce recipe because we enjoyed it so much. Prep time includes cook time.

SERVES 2 (change servings and units)

    Cut a thin strip around the center of each potato.

    Place potatoes in a small saucepan and cover with water.
  3. 3
    Bring to boil.
  4. 4
    Reduce heat; cover and cook 15-20 minutes or until tender.

    Drain.
  6. 6
    In small bowl, combine the butter, lemon juice, horseradish, salt, dill weed and pepper.

    Pour over potatoes.

These potatoes were great. I followed the recipe as posted. I love horseradish, so I think next time I will add a little more just to spice it up. Great and easy recipe.
