Hopple Popple German Breakfast Casserole

Eye opening breakfast casserole from an old German favorite. Add a slice of toast and a fruit salad for a hearty start to a busy Saturday! Or how about brunch?

SERVES 5 -8 (change servings and units)

Ingredients

Directions

    In a large electric skillet on medium high, combine potatoes (enough to cover the bottom of the pan about 1/2-inch deep), onion and butter; saute until slightly browned. Spread evenly in pan.

    In a mixing bowl, combine eggs, milk and seasonings. Pour over potato mixture in pan.

    Layer pepperoni over the top. Cover pan and cook on medium low for 10-15 minutes (eggs will be 'set'). {While that's cooking, prepare a simple fruit tray or salad.}.

    Remove lid and sprinkle cheeses over; put lid back on, but turn off the heat. Let stand 2-3 minutes. [If you're having toast with this, make it now.].

    Cut into wedges or squares and serve immediately.

    Option: Fry Italian bulk pork (or turkey) sausage, drain fat, add to potatoes. Toss in a can of Ro-Tel tomatoes. OR try other cheeses!

We liked this dish, though I forgot to add the Italian seasonings. sigh. I think I will add some salt to the potato layer next time. And add the Italian herbs! Reviewed for ZWT4.

    I really liked this. It reminded me of pizza with a potato crust. The recipe turned out perfectly without any changes. Today my dh warmed up the leftovers and told me to come back and change my review. He was recovering from the stomach flu when we first had it and after eating the leftovers said "This stuff is awesome, what was I thinking??" Obviously, the flu had affected his appetite. My picky kids wouldn't eat it, but I'll be making it again. Next time I think I will cut back a bit on the cheese and add some bulk sausage. Also, the leftovers were great!

    This was so easy, so fast and so delicious! I cut it down and made it just for one. I cooked it in a round pan on the stove and it came out perfectly. I did add only white cheese and some green onions on top! Thanks Debber for sharing your yummy recipe!
