Honey-Walnut Prawns

Crunchy sweet walnuts with crispy prawns--a wonderful combination. Don't let the mayonnaise part throw you off--it is very good.

SERVES 6 (change servings and units)

    Boil walnuts in 5 cups water for 10 minutes; drain.
  2. 2
    Place walnuts and 1/2 cup sugar into 2 pints of boiling water. Boil for another 10 minutes.

    Remove walnuts from water and coat with honey.
  4. 4
    Heat 2 cups oil until almost smoking, then fry walnuts until they are shiny and brown, about 5-8 minutes.

    Remove and place on cookie sheet to cool.

    Mix cornstarch and egg whites together to form a thick, sticky mixture. Mix shrimp into this mixture and set aside.

    Mix mayonnaise, lemon juice and condensed milk in a medium bowl until smooth.

    Heat 1/2 cup oil and deep fry shrimp until golden. (Put only a few in at a time or they will stick together).

    Drain shrimp and then fold into mayonnaise sauce.

    Serve over the cabbage the sauce is great with it.

    This is better than my favorite chinese take out!! I didn't want to go through the trouble of boiling and frying the walnuts since it's only a 1/2 cup. Instead, I cooked the walnuts on the stove with some sugar and carmelized them a bit. Then, I took them off the stove then drizzled some honey on it and mixed. Results were fabulous!! NO need to fry the walnuts at all. This meal is a real treat, rich, fattening and delicious!

    We used to eat at a Chinese place in Vegas and we'd pay $40 a plate for this, served with white rice and broccolli....this is just as good if not better...we were having withdrawls moving back to Idaho and not have a China Doll here! Wish we had found this recipe before, would have saved some money. This was so good we tried it with cubed chicken and rolled it in cocconut before frying--wonderful! Thanks for posting!
