Honey Ginger Salmon

Recovered this old worn magazine cut out some time ago (if the yellowed edges are any sign). This is a quick and easy fix for any busy night. Cook time does not include chill time.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Spray grill rack with nonstick spray before starting the grill.
  2. 2
    In bowl combine the juice, soy sauce, honey, onion, ginger and garlic powder. Mix well.
  3. 3
    Reserve 1/3 cup for basting; cover and refrigerate.
  4. 4
    Pour remaining marinade into large bag or dish; add salmon and turn to coat.
  5. 5
    Seal bag or cover dish and regrigerate 30 minutes, turning 2-3 times.

    Heat grill to medium-hot heat.
  7. 7
    Drain and discard marinade.
  8. 8
    Place salmon skin side down on grill.
  9. 9
    Grill, covered 5 minutes.
  10. 10
    Baste with reserved marniade.
  11. 11
    Grill 8-10 minutes longer until done to your taste.

Very simple marinade that does not cover up the flavor of the salmon. I broiled rather than grilled due to inclement weather, but it worked fine. Made for Fall 2008 PAC.
