Honey-Chipotle Pecans

Not your standard toasted nuts; sweet, yet slightly salty, with a flash of smokey fire. Goes great in soups (especially sweet potato or pumpkin) and salads or delicious on their own as a snack or party appetizer.

SERVES 8 , 2 cups (change servings and units)

    Preheat oven to 325°F.

    In a skillet, warm honey with chipotle powder and cinnamon over low heat, then add the nuts and stir to coat evenly.

    Line a baking sheet with waxed paper, then spread nuts evenly in a single layer on the sheet.

    Bake in preheated oven until nuts are fragrant (10-15 minutes).

    Allow to cool slightly (1 minute).

    In a mixing bowl, combine sugar and salt.
  7. 7
    Add the warm pecans, and toss to coat evenly.

    Spread out on fresh sheet of waxed paper and let dry completely.

    Store in an airtight container.

Not only is this great as a snack, but I have use as a topping to sweet potato casserole at Thanksgiving.

    Loved the way these turned out, not sticky at all. I would like them a little spicier but it could be what I had to substitute. I only had ancho chili powder so used 1 t. plus 1/2 t. smoked paprika. This is addictive so do be careful.

    So addictive! I put these out on New Year's Eve...they didn't last an hour (and there were only four of us). I couldn't find chipotle powder, so I used regular chili powder and it wasn't all that spicy, but still SOOOOO good. I'll have to add chipotle powder to my next Penzy's order! Thanks littleturtle!

    These were wonderful, sweet with that lingering hint of spicy smoke. DH did not care for these as much as I had hoped, but I LOVED them. Will definitely make again and again Thanks littleturtle!
