Homemade Enchilada Sauce

I use this for our favorite enchiladas. I've been told that it makes them taste like Chili's.

SERVES 8 (change servings and units)

Ingredients

Directions

    Heat oil with cornstarch in saucepan over medium heat. Cook for 1 minute.

    Add in chili powder and cook for another minute.
  3. 3
    Gradually stir in the broth, mixing well with a whisk to make sure you get out the lumps.

    Stir in the remaining ingredients.
  5. 5
    Simmer until thickened on low.

Now that I have this great recipe I don't have to use that canned stuff anymore, which is fine by me! Cheaper to make then to buy, this is going to be made often!

    Excellent and in my opinion a very authentic tasting sauce. I made 2 pans of enchiladas(16 total) and doubled the sauce as we like a good coating. There was a little left....maybe a cup. I shredded a deli chicken and then mixed with a cup of the sauce and a cup of chopped onions with the chicken in a large bowl.We also stuffed a little cheese inside as well. Oh....I did use a 1/4 cup of chili powder and a teaspoon of cayenne! Great

    I loved this!!! I would give it more than 5 stars!!! Made it instead of canned enchilada sauce for V's Mexican Lasagna and will probably never buy the canned again. It was easy to make and the result.. Well homemade. I'm so glad I have this recipe now... Thanks for sharing. (Made for March Bevy Tag)

    This sauce was so delicious!!! Way better than any can sauce you can buy, and in my opinion it's better than any restuarant! I doubled the recipe, however I used only a pinch of oregano.
