There are lots of variations of this herb mixture. This one is my favorite. Use it in poultry dishes, soups, and stews.

1/4 cup (change servings and units)

    Crush the fennel seeds finely with a mortar and pestle (or use a coffee grinder or food processor).

    Combine all the herbs in a small jar with a tight-fitting lid.

My first experience with Herbes de Provence and it certainly won't be my last! I used this to season a pork tenderloin and couldn't have been happier with the results. Loved it!

    I made this herb mix to go with your vegetarian Shepard's Pie. This was the first time I tried this mix but it won't be the last. It's just the thing to add some spark to the lentils and barley. I had been growing most of the herbs on my property as ornamentals. They do well in the Mediterranean climate of Southern California, they grow where I can't get anything else to grow. Thanks for posting, this one is a keeper.
