Herb-Roasted Butternut Squash and Sausages

I love to serve polenta with this hearty dish, along with some simple green beans.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 450°F.

    Combine squash and next 6 ingredients in large roasting pan.
  3. 3
    Toss to coat.
  4. 4
    Sprinkle with salt and pepper.
  5. 5
    Roast until squash is tender and sausage heated thoroughly, stirring once, about 30 minutes.

    Drizzle with vinegar and serve.

This is a great recipe. It's simple to make and from ingredients that we usually have in our cupboard/garden. DH and DD really enjoyed how the sausage went all puffy in the hot oven. We'll definitely be having it again. Thanks.

    This was wonderful! I used garlic turkey sausage and dried herbs (didn't have any fresh). It worked out great. Will make again and again. Thanks!

    This rates more than a 5 star recipe! It is good tasting, healthy and easy to fix-what more could you ask for? I used one butternut squash, one sweet potato, one onion chunked and one green pepper. I used dried spices, because that's what I had and used one teaspoon of each. I forgot the balsamic vinegar, although I love the stuff and it was still delicious. I had a reduced calorie kielbasa that I used and it was a hearty, healthy, very tasty meal. I served it with some spiced apples. This is a great recipe. Thanks, Carole in Orlando

    This is a very yummy meal. I used 3 chicken sausages with artichokes, half of a good sized butternut squash for the 2 of us and made the recipe as stated, except I only has fresh sage so I used dried rosemary and thyme. This seemed to work very well though I will try it with all fresh herbs next time. This is a very easy meal to make. I served it with polenta and a salad of baby greens topped with avocado & dried cranberries, Thank you Geema for a tasty recipe.
