Hearty Vegetable Soup

This is great to put together when you're looking for something hearty to make but don't have any protein around. To make it truly vegetarian, you could use vegetable broth.

SERVES 4 (change servings and units)

    In saucepan, combine all ingredients. Bring to a boil, then reduce heat.

    Simmer, covered, 20 minutes.

I used low-sodium beef broth, 1 small onion, 1/2 cup of frozen corn instead of lima beans cause I don't like it. This is a great healthy soup. But it was a bit sweet. Maybe too much tomato sauce. Thanks jackie Made for Holiday tag
