This Sloppy Joe recipe is tasty, filling, and packed with veggies! It's a slightly tweaked Cooking Light recipe.

SERVES 6 (change servings and units)

Ingredients

Directions

    Combine ketchup and next 8 ingredients (ketchup through hot sauce), set aside.
  2. 2
    Heat oil in Dutch oven over medium-high heat; add mushrooms and next 7 ingredients (mushrooms through ground round); saute 5 minutes until meat is browned, stirring to crumble.

    Stir in ketchup mixture; bring to a boil.
  4. 4
    Cover, reduce heat, and simmer 20 minutes, stirring occasionally.

    Serve on toasted hamburger buns.

I can't believe I forgot to review this recipe. It is delicious! And a great way to get my kids to eat their veggies without realizing it. It is tangy and freezes beautifully. I always double it when I make it and freeze the rest for another meal. Thanks for a great recipe.

    I was looking for a way to use some ground turkey breast and came across this recipe. I was a bit skeptical with all of the veggies but trusted the reviews. It was great and super easy! You really CAN'T taste the veggies and this is a great way to "sneak" them in! The only thing I added was a teaspoon of basil and an extra "shot" of Worcestershire sauce, based on comments about the flavor. My husband and I both loved it and will definitely add this to our list of favorites!

    I actually turned this into a vegan recipe by replacing the beef with soy ground round, and using chicken-like TVP chunks. The sauce may have been slightly missing flavor to my taste, but the whole family loved it so big points for that! Easy and yummy.

    It was 4:30 and I had 1.5 pounds of ground beef defrosted and no idea what to make. So this was a very good find! I chopped the veggies very finely in my food processor, making a few adjustments based on what I had (no celery, slightly less mushrooms, more carrots). I left out the hot sauce since I am feeding 2 small children but otherwise followed it exactly. The kids ate it happily. I did feel it needed a little more flavor. Next time I may add a little more ketchup. But it was a good healthy fast recipe!
