Healthy Multigrain Muffins

This recipe makes delicious, healthy and versatile muffins. I have tried cranberries, apple pieces, almonds and macadamias as well. You can use any fruit or nut that you especially like.

SERVES 15 -17 , 15 -17 muffins (change servings and units)

    Preheat oven to 375 degree F.

    Line muffin tin with paper cups, or use a silicone muffin pan, if available.
  3. 3
    Whisk together flours, oat bran, baking powder, baking soda, nutmeg, cinnamon and salt.

    Lightly beat the egg and egg whites. Stir in the buttermilk, applesauce, almond and vanilla extracts, brown sugar, and oil.

    Stir the liquids into the dry ingredients, until almost combined (batter will be thick), being careful not to over-mix. Gently stir in the dried fruit and nuts.

    Fill muffin cups about ¾ full. Bake until tester is clean, about 23 minutes.

    After a few minutes, remove muffins from the pan, and cool on a rack. You can serve them room temperature, or re-warm them in a toaster oven.

Great muffins! I doubled the cinnamon and used a mix of chopped dried apricot and apple for the fruit. The rest was "by the book" with the exception of the sugar, I replaced the ask for brown sugar with 1/2 the amount of Splenda Brown Sugar. They are really delicious warm from the oven with morning coffee. The recipe is simple to follow and quick to make. It's a keeper! Thanks for this one Maito.

    These are wonderful little gems! I used 2 eggs instead of the 1 egg and 3 whites as I didn't have enough eggs. I used 1-1/4 t. vanilla and no almond. We had raisins, but would love these with some apple bits. I also replaced the oat bran with wheat bran. Thanks, Maito!

    These are WONDERFUL HEALTHY muffins! I used the maximum amount of spices, Splenda brown sugar and Enova oil. I added pecan chips and a diced granny smith apple. The spice was subtle but was enough and went very well with the apples. The batter filled 15 foil muffin cups. My co-workers all LOVED these too. Made for the Please Review game.

    These are really good, healthy muffins and I'll definitely be having them again. My only comment (and the reason for the 4 stars) is that I felt they were sliiightly missing something. I can't pinpoint what it is - maybe the recipe needs some vanilla? or some more nutmeg/cinnamon? I'm not sure, but to me they were just a little bit plainer than they could be. I made mine exactly as directed with dried mixed fruit and chopped hazlenuts. The flavours were good - not too sweet but not lacking in sweeness either. This is a definite keeper but I'll be tampering with some bits. Thanks Maito!
