Healthy Low Fat Apple and Oatmeal Muffins

Heathy moist apple oatmeal muffins with a pretty garnish of sliced apple on top. Recipe from Apple & Pear Australia Ltd.

SERVES 12 (change servings and units)

Ingredients

Directions

    Soak the oats, apple juice, sugar and vanilla for 30 minutes.
  2. 2
    Mix in the flour, baking powder, grated apple and cinnamon.
  3. 3
    Fold in the beaten egg whites; Spoon into 12 muffin tins.
  4. 4
    Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.

    Cool in pan for a few minutes, then remove from pan and cool on wire rack.

I made these today using plain white flour. I didn't time exactly 30 minutes to let the ingredients site; but I'm sure they sat for at least fifteen. I also didn't top with an apple slice. But, overall, these were surprisingly good. I think next time, i will be more careful folding in the egg whites. Somehow, a half batch of this made 12 muffins for me; I think maybe I beat them too much.

    I will eat these, but I will not be making them again. They are very dense and chewy, although they smell great!

    They are moist, they are tempting, and they are healthy too? YES! Wonderful texture. I didn't have quick oats, so I used old fashioned oats, but they were great here. Didn't change anything else. I have to admit that I love the combination of apples, cinnamon, vanilla and whole wheat flour. Next time I will use spelt flour for a more nutty note in here. The egge white here gives them a lighter colour and a very soft texture. They came out perfect after 30 minutes of baking. And the slices on top are a great idea of decorating. Is there still someone, who thinks that healthy can not be tasty? Try these muffins and you will be convinced. Thanks for sharing another tempting and delicious muffins recipe.

    There are a few things wrong with this recipe.... first, it says it makes 12, but it actually makes 24. Second, it says the prep time is 15 minutes, but with soaking the oats for 30 minutes and grating apple, it tends to be quite a bit more than that. Third, the baking powder is missing from the instructions (but not the ingredient list). I didn't realise I had left out the baking powder the first time I made them, and ended up with 24 little hockey pucks. I tried the recipe again with the baking powder, and it was a little better, but I still wouldn't make them again. They were chewy in the middle and needed baking longer than the recipe said. The flavour was nice though, and I liked that the oats were soaked in apple juice.
