Healthy Instant Cinnamon and Raisin Slice

Recipe #119319 | 1 min | 1 min prep | add private note

By: Ethan UK
Apr 27, 2005

Do you adore all those Cinnamon & Raisin combinations but the caloric allowance doesn't stretch that far as often as you'd like ? (At least without endless mental guilt-trips Do you love cinnamon and raisin bagels and loaves but want some now - right this instant, but all the stores are 20 miles away, and closed ? This almost instant snack tastes wonderful, is almost guaranteed to get you to make a second cup of coffee to go with a second slice and it's so healthy you can have another slice without feeling guilty for anything except the sheer sensual pleasure of eating it!

SERVES 1 (change servings and units)

Ingredients

Directions

  1. 1
place slice of bread on plate it's to be served on.
  2. 2
Quickly spread a couple of teaspoons of fat-free natural yoghurt over the slice so it's generously thick.
  3. 3
Sprinkle very generously with granulated sweetener.
  4. 4
using back of spoon smooth the sweetener into the yoghurt.
  5. 5
Sprinkle fairly generously with ground cinnamon (to taste).
  6. 6
Quickly strategically place raisins onto the slice - about as many as you'd get in a slice of cinnamon and raisin bread works well - or a few more! - to taste.
  7. 7
Lightly press the raisins so they get a moment or two to soak a bit of the yoghurt.
  8. 8
SERVE -- Goes great with a nice cup of coffee! Yummy!
  9. 9
Optionally you might like to strategically add a very few drops of lime juice or lemon juice.
  10. 10
pleasing note for us dieters --
  11. 11
This is where granulated sweetener really comes into it's own -- this just would not be the same with sugar. Granulated sweetener dissolves instantly even when the liquid is very cold whereas made with sugar this would be all crunchy and probably nothing like as nice!

Yumyum! I've never thought of using yogurt like this before. I actually made these with English muffins and a bit of honey instead of artificial sweeteners. I also used dried cranberries instead of raisins. I forgot to add the cinnamon but I definitely will next time. This was so tasty! Thanks!

This is absolutely fabulous, quick easy and ingredients always in the house - Not only that it tastes so darn good! I toasted the bread (I keep my bread in the freezer) and liked the toasted texture. I used No Fat Bulgarian yogurt. Thank you Ethan B UK for domething that will be a breakfast regular

Marvelous, Ethan. What a great idea. I didn't use the sweetener or sugar and didn't miss it a bit. I used Greek yogurt and think it's particularly appropriate in that it's quite a bit thicker than most yogurts. I'm going to have this for breakfast often. It's the perfect balance of carbs and protein for my needs when served on whole wheat toast.
