Hawaiian Rice

Here is an easy rice side dish.

SERVES 4 -5 (change servings and units)

Ingredients

  • 1 1/4 cups rice
  • 2 1/2 cups chicken stock
  • 3/4 cup diced canned pineapple
  • 1 cup ham, diced
  • 3 tablespoons butter
  • 1/4 cup slivered almond
  • salt and pepper

Directions

  1. 1
    Cook rice in chicken stock until stock is absorbed. Brown pineapple and ham in butter in 1 1/2 quart casserole. Stir in rice and season, to taste, with salt and pepper.

    Add almonds, stir well and bake for 15 minutes at 350 degree oven.

Oh this was so good, I added in some whole garlic cloves to the water and did a few amount adjustments, this was really enjoyed thank you Char!

    I made this to go with hawaiian chicken so I did omit the ham. I also added minced carrot and red pepper and sliced almonds (that's all I had on hand). Great side dish. Thanks so much!

    This is just delicious rice. I did have to use extra liquid to fully cook the rice, but other than that I followed the recipe exactly. Thanks for posting this, I will most definitely make it again.

    This rice was wonderful! It had just enough flavors so that it did not overpower the shrimp and sweet sauce that was also served (Sweet & Spicy Shrimp (Chambord Shrimp)). I used Brown Chicken Stock which was very flavorful. I will be making this one again! If I were to make this as a side dish I would sauté an onion along with the pineapple and ham. Our four year old cooked most of this recipe himself and he devoured it at dinner time. Thanks Chabear01. PS - The photograph of the rice with the bear was posted in loving memory of EddieBear.
