Hawaiian Chicken Kabobs

The marinade is the key to these great kabobs. They only need 1 hour in the refrigerator to marinate.

SERVES 6 (change servings and units)

Ingredients

Directions

    Put chicken in large shallow dish.

    Drain pineapple, keep 1/2 cup juice.
  3. 3
    Set pineapple aside.
  4. 4
    Mix juice with the next 7 ingredients in small pan.
  5. 5
    Bring to a boil.
  6. 6
    Reduce heat and simmer for 5 minutes.
  7. 7
    Pour over chicken.
  8. 8
    Cover and chill for 1 hour.

    Remove chicken from marinade, reserve marinade.
  10. 10
    Alternate chicken, pineapple, green pepper, mushrooms, and tomatoes on skewers.

    Grill kabobs over hot coals 20 minutes or until chicken is done.

    Turn and baste frequently with marinade.

    Serve over hot rice.

Loved this!!! I made the marinade in the morning & had the chicken soaking in it all day. Made kabobs with pineapple, red bell pepper & mushrooms. As suggested by another reviewer I baked these on a rack in the oven for 20 mins on 350. I basted every 5 minutes. Can't wait to make for company.

    These got rave reviews during my Memorial Day party this year! I used chicken, shrimp and beef (for the beef, I added a splash of rice wine vinegar to the marinade). They were eaten as fast as they were taken off the grill! Thanks!

    These Kabobs are my new favorite summer recipe!! They are so easy and simple to make. I wrapped bacon around the chicken as I put them on the skewers and alternated them with the pineapple and veggies(we like portabella mushrooms, red peppers, red onion and zucchini). Put them on the grill and brushed them with the marinade every 10 min. until done. So yummy!!! Thanks for the great recipe!

    My family loved it! The chicken was very moist and flavorful. I added a small red potatoe and zucchini to the skewer. It was a complete meal. I definately will make this again. Can't wait.
