This makes breakfast easy: it's all in one pan! Well, a few biscuits might be nice, too..

SERVES 6 (change servings and units)

    Preheat oven to 350 degrees F.
  2. 2
    Brown sausage links in skillet over medium heat until cooked through; remove from heat and cut into bite sized pieces.
  3. 3
    In a mixing bowl, lightly beat eggs; stir in all other ingredients.
  4. 4
    Pour mixture into a greased 2-quart baking dish or casserole, and bake, uncovered, for 30 minutes, or until eggs are almost set.

    Allow to stand 5 minutes before cutting into servings.
  6. 6
    Serve hot.

We really enjoyed this breakfast casserole which we had for supper. I didn't have any half and half so I used low fat milk. I also used red and green peppers. Thanks Sue

    It was pretty good, but I think next time I would cut back on the sausage and add some more veggies to give it a little less heaviness. Was popular at the brunch we brought it to, though! Very simple to make, which was a big plus.

    Oppps, forgot to review this after Xmas with DH's family. Sue, you were right, putting this together the night before worked beautifully! Saved me so much time with everything else I had to do. Followed the recipe to a "T" and even used some pepper I chopped up from my garden in the summer that I froze and it looked so colorful with red, green, & yellow peppers. Doubled the recipe for 18 people and only had 2 very small pieces leftover. I think the whole thing would have went if I didn't have another 20 dishes for them to choose from! Thanks again for a great recipe and sorry I didn't get to take a pic as the SIL's raided my oven before I could take any pics. Also, I did add some diffent spices such as garlic & parsley, not much just a little to add some flavor. Will definately be making again.

    Great breakfast casserole. I used a pound of Oldhams sausage, browned & crumbled. I also used O'Brien potatoes, because I was too lazy to chop peppers. I added a bit of cayenne and I also sprinkled a bit of cheese on top the last 5 minutes of baking. This only took about 20 minutes in my oven, but it runs on the hot side. I served with Bloody Marys and hot biscuits & jelly. Thanks for sharing, Sue...will make again, it was delicious.
