This is my brother's recipe and he says it's really good! I don't know cause he hasn't made it for me--Hint Hint.

1 nine x nine inch cake (change servings and units)

Ingredients

Topping

  • 3/4 cup nuts, chopped (pecan or walnut or almonds or all three mixed)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Batter

Directions

  1. 1
    Cream together sugar, vanilla and margarine.
  2. 2
    Add eggs and milk; beat well.
  3. 3
    Mix flour, baking powder and salt.
  4. 4
    Slowly stir in the dry ingredients (do not overhandle).
  5. 5
    Grease a 9x9-inch pan and pour in half of the batter.
  6. 6
    Top with half of the nut mixture.
  7. 7
    Pour in remaining batter.
  8. 8
    Top with remaining nut mixture.
  9. 9
    Bake in 375°F for about 25 minutes or until a knife comes out clean when inserted in the middle.

    Cool for 10 minutes and then remove from pan and cool on a wire rack.

    This coffee cake was easy and tastes great. My topping was not crumbly because it kind of baked into the cake, but the taste was great nonetheless. I will definitely make it again.

    This cake was absolutely wonderful! I made it without nuts because I didn't have any, and it was a delicious cinnamon streusel cake! It was moist, with a crunchy, sweet topping that contrasted yummily with the rest of the cake's moistness. I did not think it was too sweet, and even added a small amount of powdered sugar icing--delicious! My husband and I ate it all in one day!

    Good moist coffee cake made with pantry staples. In order to avoid the sweetness overload some others mentioned, I didn't pack down the brown sugar when measuring. I also used butter instead of margarine and added a half teaspoon of mace to the batter and a pinch of salt to the topping.
