Hangover Poached Eggs

Two yellow orbs, surrounded by white in a sea of red. Been there, done that. This is an ehanced and scaled down variation of Poached Eggs in Catsup posted by Darlene Summers. A little tartness has been added to counter the sweet catsup and extra liquid was added to accommodate cooking smaller portions in a standard frying pan. Some people might want to add just a dash of hot sauce. Cooking is a Creative Sport.

    Mix the catsup, vinegar and water in a frying pan with a tight fitting lid.
  2. 2
    Heat over medium flame until the liquid starts to bubble.
  3. 3
    Add the butter and stir until melted.
  4. 4
    Carefully add the eggs, and simmer covered for 3 minutes.
  5. 5
    Remove the eggs with a slotted spatula and place on the toast.
  6. 6
    Pour the catsup sauce over the eggs and top with the cheese.

These are delicious eggs! They made a lovely treat of a breakfast. I made some for myself and for my mom, and we both really enjoyed the outcome. They had a good tangy flavor. I used apple cider vinegar and liked the result. I cooked mine for 5 minutes because my mom likes her eggs more firm. I will definitely make these again. Thanks for the great recipe!

    If you close your eyes you would swear you're eating a grilled cheese sandwich alongside a nice bowl of tomato bisque. Just as easy, too! Added Franks x-hot to the sauce. Excellent! I have never-EVER had ketchup with my eggs before. But, since I left my A-Game at the bar last night and needed a 'fix', I gave these a try. I'm shocked at how much I liked these! And I really think it helped make the room spin slower! (LOL) This will be a go-to recipe when I need comfort food! Thanks!!

    You guys have got to try these!!! Normally I would say I don't like poached eggs and that I don't like ketchup on eggs but now I need to rethink those statements. I make these as a favor to Bill, so he could have a photo on the recipe. Of course, I couldn't make them without trying them and boy was I surprised...they are great!! Even the kids devoured them. I prepared as directed except it took about 4 1/2 minutes for the whites to be completely cooked. The lid on my pan didn't seal completely so that could have been why it took longer. I served them on whole wheat toast. Give it time for the sauce to soak into the bread and then enjoy this unique treat! I've got to make this for my dad...he'll love it! Thanks Bill for broadening my horizons!!

    I found this recipe while I was searching for St. Patrick's Day food and it sounded so good I decided to try it for breakfast even without a hangover. This recipe is so simple but it is DELICIOUS!! As Marg stated in her review, it did take longer than 3 minutes for my eggs to poach, but it was worth the wait. The only thing I changed was to add some Frank's hot sauce to the catsup mixture. After the eggs were on the plate I covered the plate with the lid of the pan for just about 30 seconds and the cheese melted very nicely and the sauce soaked into the bread. I can't wait to make these for my family, they will love it too! Thanks for the great recipe Bill! Perhaps this recipe should be renamed and posted again so more people will get to try it!
