I got this recipe, years ago, when visiting out in California. It is good for family and/or company (even plain meat and potatoes people like this one!). I am posting it as it was written, but I always double the sauce ingredients.

SERVES 4 (change servings and units)

    Shape meat into patties of equal size.

    Sprinkle with salt.
  3. 3
    Sprinkle all over with the crushed peppercorns and press down on meat to help peppercorns adhere.

    Heat a heavy skillet and do not add fat of any kind.
  5. 5
    When skillet is quite hot add the patties.
  6. 6
    Cook about 5 minute on one side.
  7. 7
    Using a spatula, quickly up patties and turn.
  8. 8
    Cook about 5 minute longer (10 minute for well-done).

    Remove patties to a warm platter.

    Add 1 tablespoon of the butter to the skillet.

    Add shallots to the skillet and cook, stirring with a wooden spoon until shallots are wilted.

    Add the wine and cook 1 minute.

    Add the cognac and let reduce to about half.

    Add the beef broth and cook until reduced to about 3 tablespoons.

    Swirl in the remaining butter.

    Return patties to skillet (off the heat) and turn once.

    Serve garnished with the parsley.

I added onions and mushrooms and did not have the cognac on hand which I'm sure would have added another wonderful layer of flavor. Thanks for the post!

    I took CabinKat's advice and added worchestershire. I was also heavy on the peppercorns and we loved it. All that booze gives it a nice rich flavor. Not an everyday dish, adds some elegance to a hamburger steak, for sure. Thanks for the recipe.

    I followed the directions on this recipe exact. I took into consideration about doubling the sauce. Still, the hamburger was plain. My whole family agreed that it needed something to kick it up. It may have been better with some Worchestershire sauce added.

    I know this gourmet Hamburger Steak was not intended as a patty on a burger bun but WOW it was wonderful!. I added mushrooms with the shallots. The flavor from the wine & cognac is incredible.. I added aged cheddar, tomatoes and young sweet onions to the bun. I also seved it as a dinner with potatoes, steamed broccoli & beets. Enjoyed by all Thanks MA from Florida for posting this wonderful recipe
