I found this in Better Homes and Gardens Low-Cost Cooking cookbook. I've had the cookbook for about 25 years and only recently discovered this recipe. It's one of those recipes that I make just about anytime because I always have the ingredients on hand and my family (especially my youngest son) loves it!

SERVES 6 (change servings and units)

    In a skillet coated with spray oil, brown ground beef, onion, green pepper, and garlic until meat is browned. Drain off fat.
  2. 2
    Add rice; cook stirring constantly, for 2 minutes.
  3. 3
    Add remaining ingredients (except cheese).
  4. 4
    Bring to a boil, reduce heat.
  5. 5
    Cover and simmer for 25 to 30 minutes or until rice is tender, stirring occasionally.
  6. 6
    Remove cover, sprinkle with cheese, if desired. (We put the cheese on at the table.).

I have made this recipe many times now. My entire family, encluding a 3 and 5 year old love it. I don't always have the green pepper on hand, but it's great with or without it.

    I was not impressed with this. I followed the recipe exactly and we just couldn't eat it. After all the good reviews I was disappointed. We ended up throwing it away. Sorry!

    I used Muir Glen Fire Roasted tomatoes in this. They added a great smoky flavor. We love this recipe.

    I too have Better Homes and Gardens Low-Cost Cooking cookbook, but hadn't noticed it either. Good thing you posted the recipe, otherwise it still would be unnoticed. I don't care for green pepper, so used red and I used beef stock instead of water. Served the cheese at the table.
