Ham and Cabbage Soup

An easy to make hearty main dish soup. Add hot rolls or bread - and dinner is ready !

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
    Add broth, ham, cabbage, potatoes, onion, carrot, bay leaf and parsley to a soup pot, cover and bring to a boil.
  2. 2
    Reduce heat and simmer 20 minutes or until potatoes are tender.
  3. 3
    Add corn and cream, simmer uncovered until corn is tender.
  4. 4
    Season with salt and pepper and ladle into soup bowls.

DH and I had a soup similar to this at a little seafood restaurant last year. It was served as the soup of the day along with their salad bar. We loved it so much, I asked for the recipe, but they wouldn't share. When I saw your recipe, I decided I would try it this fall since it's too hot here in GA for soup, but DH came down with a nasty sinus infection last week and mentioned he would like to have some of that Ham & Cabbage soup from that restaurant. LOL, I remembered your recipe and not only did he love it but my 16 yr. old DD and her friend loved it as well. They each ate two bowls. They added shredded cheddar and bacon bits on top and it was a delish addition. LOL, I've already had a call from DD's friends mom asking for the recipe since her DD claimed it was "The best soup she's ever had" and she's a picky eater. Guess there's no better compliment than that! Thanks so much for sharing!

    Very tasty. The corn gave it a hint of sweetness which was very nice. The only thing I didn't like was how the cream tended to "set up" and look curdled after it simmered for awhile. It didn't affect the taste at all, though. I think the solution might be to wait to add the cream until right before serving, giving it just enough time to heat while you stir the soup frequently.

    This is the way to use leftover ham! Quick, easy and delicious. The only changes I made were using fresh parsley (added at the end) and a clove of crushed garlic. Extra fresh ground pepper when serving is a must!!
