Ham and Beans

This is a comfort food, stick to your ribs, cold night dinner! Serve wwith hot buttered corn bread. Enjoy!!!

SERVES 6 -8 (change servings and units)

Ingredients

    Wash and pick over the beans.

    Place in a large stockpot and cover with the soaking water.
  3. 3
    Let stand overnight.
  4. 4
    (you can speed this up by using your crock pot on high and watch the water. It takes around 3 hours) Drain the beans, rinse and drain again.

    Heat the oil in the pot over medium high.
  6. 6
    Add the onions, carrot and garlic.
  7. 7
    Cook, stirring often until the onions are tender, around 3 or 4 minutes.

    Add the beans, cooking water and the bay leaf.
  9. 9
    Slowly bring to a full boil.

    Reduce the heat to a simer, cover and cook for 1 hour.

    Add the ham bone to the pot.
  12. 12
    Re-cover and simmer 2 hours longer-watch the water level.
  13. 13
    Remove the bay leaf and discard.
  14. 14
    Remove the ham bone and cut away the meat.
  15. 15
    Chop into bite sized pieces and return to the pot.

    Add salt and pepper to taste.

    Serve with corn bread.

This was my first time using dried beans, and it worked really well. We did the quick soak, it worked great. I added a little bit of cayenne pepper (maybe 1/8th of a teaspoon) because we like a tiny bit of bite in our ham and beans. Overall very tasty. Next time I will probably use chicken broth, just for the added flavor

    My first time making anything with a hambone! DELICIOUS!! I felt like it needed some brown sugar and I didn't have any so I added a little bbq sauce and oh my gosh so good!! I'm going to make some corn bread and this will be our dinner. THANK YOU!!

    Very yummy! Easy to make. I used black-eyed beans, chicken stock instead of water and a pound of baked ham diced small instead of the ham bone.

    My husband said this was definitely a five star recipe...even though he kept complaining while I was making it..."don't put a carrot in it" (I did anyway), "are beans supposed to have garlic in them?","that smells pretty strong". He wound up eating three plates full, as did my 2 1/2 year old granddaughter (different size plates!) They both loved it...great recipe! Thanks, Di!
