I accidentally ate one of these thinking it was stuffed with a green olive because I wouldn't have touched "pickled okra" with a ten foot pole! Now i'm hooked on the stuff! This is a quick and easy finger food. The taste is awesome! Please let me know how you like it!!!!!!!!!

60 rollups (change servings and units)

Ingredients

  • 1 package sliced sandwich ham (the rectangular shaped)
  • 8 ounces cream cheese
  • 1 jar pickled okra

Directions

  1. 1
    Bring cream cheese to room temperature or soften in microwave.
  2. 2
    spread thin layer over 1 side of ham slice.
  3. 3
    Cut each end off okra slice.
  4. 4
    Lay okra slice over cream cheese at 1 end of ham slice.
  5. 5
    Roll up and refrigerate until firm enough to slice.
  6. 6
    Slice into 1/4" swirls.
  7. 7
    Lay flat on serving platter.
  8. 8
    Cover with plastic wrap and chill until ready to serve.

    I am so happy! I have so much pickled okra left over.. I was looking for a recipe to use it in, instead of just eating it by itself!! This looks fabulous and yummy.. Any suggestions on how to get it perfect looking? did you cut your ham strips first, then roll it all up? Thanks again! Can't wait to try it

    I love pickled anything, especially okra so this was a sure hit with me! I made a variety for lunch using low fat cream cheese, okra, pickled peppers and just plain dill pickles. Add some Wasa on the side and I had a tasty plate of nibbles that didn't blow my diet. Thanks for the idea!

    What a wonderful and easy appetizer!! People kept asking me what the crunchy little green stuff was. I finally gave in and told them. They were astounded. Most had either never had pickled okra or thought they didn't like it. Converted lots of them. Thanks again for this wonderful recipe. Tony
