Ham Casserole

I think this originally came from "Best of Bridge". It is a great way to use leftover ham.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 400 degrees F.

    Cook onion in butter.
  3. 3
    Blend in flour, salt, and pepper.
  4. 4
    Add milk slowly, stirring continuously.
  5. 5
    Cook until thick.
  6. 6
    Remove from heat.
  7. 7
    Add cheese.
  8. 8
    Stir until it melts and is well blended.
  9. 9
    Add ham and potatoes.
  10. 10
    Mix together.

    Pour into a casserole dish.

    Sprinkle with crumbs.

    Bake at 400 degrees F for 30 minutes.

    I really expected more out of this recipe. It probably wasn't all the recipe's fault when I used cheap mozzarella instead of swiss. I thought it was really salty. I didn't measure, but there's no way I grounded more than an 1/8 of a tsp. I didn't even salt my potatoes when I cooked them and still came out that way. Was easy to put together though. Only way I'd try this again is with a higher quality cheese.

    Excellent! We all love scalloped potatoes and ham in our house. This dish is better than plan old scalloped potatoes. My son hates swiss cheese but just loved it in this recipe. I doubled the recipe and I'm glad I did. There's not alot of it left over.

    This was an easy way to use up some leftover ham. I used cheddar since that's what I had, everything else was the same. Next time, I will mix a little melter butter with the bread crumbs. The onions are optional, IMO, but this could be a versatile recipe, mix in some veggies, change the cheese, well you know! Thanks.
