Halibut With Garlic Mayonnaise-Parmesan Topping

I adopted this recipe, I love, I make it often and even use it when I plank, it actually goes well with ANY fish I try it on, Original Intro: quick and easy meal.

SERVES 2 (change servings and units)

Directions

  1. 1
    To prepare the topping: Combine mayonnaise, lemon juice, garlic, mustard, Parmesan, green onion and Tabasco.
  2. 2
    To prepare the halibut: Place fish on a broiling pan.
  3. 3
    Sprinkle with lemon juice, salt and pepper.
  4. 4
    Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until fish tests done.

    Remove fish from oven and place a rack close to the broiling element.
  6. 6
    Turn the oven to broil.
  7. 7
    Spread the top of the fish with garlic topping.
  8. 8
    Broil about 1 minute, or until golden.

    My husband tolerates fish, but generally doesn't rave about it. I picked up some really fresh rock cod at our local fishmonger and cooked it by this recipe. The only difference is that I foil wrapped the fish and steamed it in the oven instead of baking it, so it was very moist. My husband really loved this fish! He said it was the best he'd ever had--and he didn't even mind that he found a couple of bones in it (which is usually a huge put-off for him). I served it with Lemon Rice (75113) and some steamed asparagus. This one is going in my family-favorites recipe box. Delicious!!

    I made this for dinner last night and I can't say enough about how awesome it was! I don't cook fish often because I really don't have any great recipes for it, but I will be making this one over and over. My husband thought it was the best fish he'd ever eaten! I did use Red Snapper rather than Halibut because it was on sale and baked it at 350 for about 40 minutes rather than broiling because I did'nt want it to dry out on my husband who was working late. Meanie, this is so wonderful - thanks for sharing!!!

    This recipe may be billed as quick and easy, but Mean Chef forgot about delicious! This tastes like a restaurant entree. No extra tartar sauce is needed. If you like baked fish, you are going to love this!
