When we lived in Hawaii, we went to brunch at the Hale Koa many times and they always served these wonderful muffins.

12 muffins (change servings and units)

    Cream sugar and butter. Mix in eggs, one at a time, cake flour, baking powder, salt and finely chopped macadamia nuts. Mix in water last. Pour batter into muffin pan and sprinkle with coarsely chopped nuts. Bake about 25 minutes at 350º.

Definitely not the same consistency as the hale koa muffins. They are missing some sweetness too.

    I thought the muffins were very dry and seemed to be missing vegetable oil or something. The texture was very odd.
