Grilled Zucchini

This is so easy to make and you can adjust the spices and cheese to your taste. You can also try other spices. A very nice side dish with grilled chicken.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Cut the Zucchini in half lengthwise (you can also use yellow summer squash).
  2. 2
    Spread butter or margarine on one half of the squash.
  3. 3
    Sprinkle the garlic, cheese's and spices on the other half.
  4. 4
    (Use as much or as little as you like) Place the buttered half on top of the half with the cheese and spices.
  5. 5
    Slice in half or if squash is real big, cut in thirds or fourths.
  6. 6
    Wrap each portion in aluminum foil and place on grill.
  7. 7
    Grill for about 10 to 15 minutes turning often.

I thought these were very good. We did them a little different, but it worked out perfectly. We cut in half (as directed), but buttered the zucchini and grilled it side down for 10 minutes. Then we flipped it and packed the other ingredients on and grilled 5 extra minutes. The cheese held everything on nicely. We enjoyed them and will be doing them again sometime.

    I thoroughly enjoy finding recipes that make zucchinis eatable to my son. This is an easy and delicious vegetable dish to make. I followed the recipe step by step except I used freshly crushed garlic understand of minced. There wasn't any leftovers. I good indication that this is a good recipe. Thank you Denise in NH. I will be using this recipe as a keeper.

    I made this for Labor Day. This was so easy and tasted just terrific. I used the seasonings you suggested and they were great. There are so many options for future experimentation. Thanks Denise, this is definitely one worth repeating.
