Grilled Thai Steak Sandwiches

    Drain pineapple slices; reserve 1/2 cup juice.
  2. 2
    Combine reserved juice, soy sauce, garlic, ginger and pepper in a large, shallow, non-metallic dish. Add steak, turning to coat all sides. Cover and marinate 15 minutes in refrigerator.

    Grill or broil steak, brushing occasionally with reserved marinade, 9 to 10 minutes on each side or until meat is desired doneness. Add pineapple slices the last 10 to 15 minutes of grilling, or until golden brown. Discard any remaining marinade. Cut steak into thin slices.

    Spread mayonnaise evenly over rolls. Evenly layer bottom halves of rolls with steak, cucumber, pineapple slices and cilantro. Place top halves over layer halves.

Yummy! Made this for our dinner tonight and just served it with some potato salad. DH said "for something with cucumber in it, this is excellent". That says it all. I loved the freshness of the cucumber with the bite of cilantro. I cut the recipe in half and had plenty for 2 sandwiches with some leftovers. I used flank steak and grilled on the bbq. Thanks for posting.

    Wow! What a great lunch we had today! These are really, really good. I used sirloin steak and cooked them on the grill. They turned out delicious. My 1 1/4 lb of sirloin did not make 5 sandwiches though....just two. But I could probably have stretched it to three by putting less meat on each sandwich, but I was feeding a 17 year old boy! The combination of the grilled pinapple, steak, cucumber and cilantro was excellent. I loved this recipe! Made for Newest Zaar Tag. Thanks for posting a winner!
