Grilled Potatoes or Roasted Potatoes on the Grill

My favorite way to have potatoes. It works the best to do the first step (microwaving the potatoes) earlier in the day.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook potatoes in microwave until tender but firm (about 3-4 minutes).

    Cool (at least an hour works best) and cube.
  3. 3
    Microwave onion pieces for about 1-2 minutes so they are slightly soft.
  4. 4
    Mix with cubed potatoes.
  5. 5
    Coat thoroughly (but lightly) with olive oil and as much seasoning salt as you like.

    Place mixture on grill, I recommend using a vegetable/seafood grate, over hot coals. Cover to prevent flair-ups due to the oil.

    Cook approximately 20 minutes, until golden, turning about every 5 minutes.

    Serve with sour cream and/or ketchup.

    This method can be used for squash, broccoli, carrots etc.

    You can also use garlic salt or other spices like oregano in place of, or in addition to, the seasoning salt.

This recipe helped me figure out how to cook potatoes on the grill, but we changed it quite a bit. We don't have a grate for our grill so we use aluminum foil. Spray the bottom with Pam, put in potatoes with some butter, garlic salt, and pepper. On the grill for 30 and they are cooked and absolutely yummy. Thanks for gettin me started.

    After seeing your photo I had to try these. They are great, but you have to watch them closely because they burn easily. I turned my about every 4-5 minutes. Along with the seasoned salt I added some of Emeril's Italian seasoning which gave them a great taste. Beats heating up the house, but I did anyway making bread. Thanks for another great recipe.

    Yummy! Another great recipe from Marg! I had a Potato medley of different types of new potatoes. I followed the recipe for the most part, I slightly sauted the onions while the potatoes were in the microwave, but did not have the time to let them cool. Also, I had a little bit of green bell pepper left and chopped that up and added it to the onions. I cooked the potatoes in the oven in one of those Reynolds grill bags on a cookie sheet at 350 for the recommended 20 minutes, turning the grill bag half way through the cooking time, the potatoes were cooked to perfect tenderness. As suggested I added a little bit of some salt-free garlic and herbs seasoning to the mix as well. I served with a dollop of sour cream on the side. Loved it!!!! I can hardly wait to try it with other veggies or a combination there of....oh the possibilities are endless.
