Grilled Potatoes With Asian Seasonings

This is a recipe by Steven Raichlen from "The Barbecue Bible". Posted for ZWT 2008.

SERVES 4 (change servings and units)

Ingredients

  • 4 tablespoons unsalted butter, at room temperature (1/2 stick)
  • 4 medium potatoes, cut into 1/4-inch slices (each about 6 ounces)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame seeds, toasted
  • 1 garlic clove, thinly sliced
  • 2 scallions, both white and green parts, trimmed and finely chopped
  • salt and pepper

Directions

    Set up the grill for indirect grilling and preheat to medium.
  2. 2
    Cut 4 sheets of heavy-duty foil, each 14 X 8 inches. Place a sheet of foil, shiny side down, narrow edge toward you on the work surface. Smear a tablespoon of the butter in the center of the bottom half of the rectangle (the half closest to you).

    Mix the soy sauce, sesame seeds, garlic and scallions.
  4. 4
    Top each buttered area with 1/4 of the potatoes and 1/4 of the soy sauce mixture. Season with salt and pepper before closing up the packages.

    Fold the top half of the foil over the potatoes and bring the top and bottom edges together. Fold the edges over several times to make a tight seal.

    When ready to cook, place the foil packages in the center of the hot grate, away from the heat. Cover the grill and cook until the packages are dramatically puffed, 20 to 30 minutes.

    Serve, warning everyone to open the packages at arm's length, using knives and forks, as the escaping steam will be very hot.

I tagged seeing I have never grilled potatoes on a BBQ before, boy did this have SUPER results, raves, and reviews. The flavors were outstanding as I see I have to use my grill more. Great recipe great flavoring, and less of aa mess to clean up.

    I cooked mine in the oven,as using the bbq is not an option here at the moment.It worked really well.The potatoes were full of flavour,and very enjoyable. A really easy recipe,and what's more there's no messy pan to wash up afterwards.Thanks for sharing.Made for PRMR.

    Made these as a 3 serve (though used full 4 serve for the sauce) and made in the oven due to unforeseen circumstances and BBQ could not be used. Also had to use a touch of sesame oil in place of sesame seeds (as I found the ones I had were well passed it). Baked at 170 C fan forced for 45 minutes and they were perfect and full of flavour and what really surprised me not too salty with the soy - delicious.     Great recipe for the grill. The potatoes were cooked to perfection and the spices enhanced the taste so much. I made these for ZaarTour04 but will be making them again soon.
