Grilled Potatoes

This is great to serve with grilled chicken or pork! Cook potatoes first, then move to an area without coals to keep warm while you are cooking your meat. Recipe can be varied to suit any dietary restrictions you may have. Can be baked in oven for 1 & 1 2

SERVES 6 (change servings and units)

Ingredients

Directions

    Wash potatoes and slice in half LENGTHWISE.
  2. 2
    Tear off 12 squares aluminum foil. Place 1/2 of a potato on 6 squares.
  3. 3
    Place one onion slice on top of potato half.
  4. 4
    Put 1 tablespoon butter on top.
  5. 5
    Sprinkle with salt and pepper.
  6. 6
    Top with other half of potato.
  7. 7
    It should look like a "potato sandwich".

    Wrap tightly with foil.
  9. 9
    Rewrap with another square of foil to seal.

    Place directly on coals.

    Roast 30-45 minutes until tender.

    "Done-ness" can be tested by squeezing.

    Use caution when squeezing hot potatoes!

    Turn packages several times during cooking, so the potatoes do not burn!

    Unwrap first layer of "dirty" foil before taking to table.

We loved these potatoes! I used russets and they baked up in about 45 minutes. The onion in the middle gives it a really yummy flavor. I love how easy this recipe is. Thank you for posting!

    These were great!! The onion in the middle was excellent with the salt and pepper and butter. I used russet potatoes. I grilled for 1/2 hour and they were perfect. DH really enjoyed these. No more microwave short cuts here for baked potatoes!! Thanks a bunch!!

    These potatoes are FANTASTIC!!! I made these to go along with T-bones for our Father's Day celebration. Great flavor, nice and moist, so I used less butter than I would on a baked potato. I used an onion slice about 1/4 of an inch and it was just enough flavor without being overpowering. I highly recommend these if you are looking for something new to try on the grill. It may be worth mentioning that I am a novice on the grill and thought these might burn easily, and I did notice a couple of spots that from the outside looked like they may have gotten too done, but the whole thing was fantastic, so don't be afraid to try this one, even if you aren't an experienced griller!! (I did use heavy duty foil for both layers, and think it helped insulate the potato just enough so that I couldn't mess it up!)
